Tasting Note
Aromas of black cherry, plum, violets, black truffle, cocoa and spice; silky, concentrated palate with bright acidity, fine powdery tannins and a long, mineral-tinged finish.
Food Pairing
Western: roast lamb, filet mignon, beef short ribs, mushroom risotto, truffle dishes. Asian: Peking duck, char siu, braised beef (soy-braised), shiitake/mushroom stir-fries and richer Korean BBQ cuts.
Production Method
Hand-harvested, 100% Merlot; small-batch vinification, aged ~18 months in French oak (reported ~55% new for 2021), minimal filtration.
Vineyard Info
Tiny, iconic Pomerol estate founded late 1970s by Jacques Thienpont; cult status with very low yields (~4–6k bottles). Now part of Domaines Jacques Thienpont (management changes noted 2022).
