Tasting Note
Opulent, perfumed Merlot: black cherry, blackberry, violets, cocoa and spice with hints of leather and new oak; silky texture, bright lifted acidity and a long, mineral-tinged finish.

Food Pairing
Roast lamb, rib‑eye steak, mushroom risotto; Asian: Peking duck, char siu pork, soy‑glazed short ribs. Also pairs well with foie gras and aged cheeses.

Production Method
Hand-harvested, small-batch fermentation in very small stainless-steel vats; malolactic often in barrel; élevage ~18 months in French oak (c.65% new). Very low yields, gravity flow in cellar.

Vineyard Info
Boutique 2–2.7 ha estate owned by the Thienpont family since 1979; legendary tiny production (c.4,000–6,000 bottles) and modern cellar inaugurated 2011. Known for sandy-gravel clay with iron deposits and an exclusive Merlot expression.
