Tasting Note
Concentrated blackcurrant and blackberry with pencil-shaving, tobacco, violet and cedar notes; finely-chiselled dusty tannins, bright acidity and a long, mineral, persistent finish.

Western: grilled ribeye/steak, roast lamb, beef Wellington, braised short ribs, aged cheddar or Comté. Asian: Peking duck, Cantonese char siu, Korean BBQ (bulgogi), Sichuan beef, lamb curry.

Production Method
Selective hand-harvest; plot-by-plot vat fermentation in new gravity winery; aged ~18 months in French oak (60% new).
