Tasting Note
Concentrated black-currant and plum fruit with cedar, graphite, tobacco and truffle notes; powerful tannic spine, bright acidity and a long mineral, cedar-tinged finish. Still youthful and highly structured for age.
Food Pairing
Western: roast lamb, herb-crusted beef, venison, beef Wellington, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (galbi), beef rendang, rich mushroom stir-fries.
Production Method
Traditional Left-Bank Bordeaux vinification: hand-harvested, fermentations with extended maceration, aged 18–24 months in French oak (significant new oak depending on vintage).
