Tasting Note
Blackcurrant and blackberry core with cedar, graphite and tobacco notes; mineral wet-stone and toasty vanilla oak. Medium–full-bodied with velvety, moderately high tannins and a long, savory finish (minty and floral nuances develop with aeration).
Food Pairing
Western: roast lamb, beef ribeye, braised short ribs, aged hard cheeses. Asian: Peking duck, char siu (Cantonese BBQ pork), Korean BBQ short ribs (galbi), braised beef with soy and mushroom-based dishes.
Production Method
Hand-harvested; fermented in a mix of stainless steel, cement and wooden vats, then aged ~18 months in French oak barriques (50–100% new depending on vintage).
