Tasting Note
Dense blackcurrant and black cherry with violet, pencil lead, cedar and dark chocolate; fine-grained, silt-like tannins, bright mineral acidity and an expansive, long fragrant finish.

Food Pairing
Western: grilled ribeye, roast lamb, venison, aged hard cheeses. Asian: Peking duck, char siu (Cantonese BBQ pork), Korean BBQ short ribs (galbi), braised beef with soy and star anise.

Production Method
Hand-harvested; fermented in temperature-controlled vats; matured ~18 months in 80% new French oak barriques; bottled after élevage.
