Tasting Note
Perfumed red and black cherry, blackberry, rose and earthy spice; firm, slightly rustic tannins with saline minerality, medium body and a long, chalky finish.

Food Pairing
Western: roast duck, beef bourguignon, lamb rack, mushroom risotto. Asian: Peking duck, char siu, miso-glazed eggplant, soy‑braised short rib, shiitake and bok choy dishes.

Production Method
Hand-harvested; 2021 was vinified fully destemmed with ~10 punchdowns; matured in French oak (c.70% new) for roughly 12–18 months.
