Tasting Note
Fragrant cherry and raspberry fruit with violet, forest-floor and subtle spice. Silky texture, fine-grained tannins, bright acidity and a long mineral, savory finish.

Western: roast duck, braised short rib, mushroom risotto, aged Comté or Brie. Asian: Peking duck, char siu pork, miso-glazed cod, earthy shiitake dishes.

Production Method
Biodynamic viticulture; hand-harvested, mostly destemmed with a small percentage whole clusters; matured in French oak (new and used barrels).
