Tasting Note
Medium-bodied Pinot Noir: red and black cherry, cranberry, crushed violet and rose petal notes with chalky minerality, subtle licorice, fine-grained tannins and a focused, long saline finish.

Food Pairing
Western: roast duck, lamb, mushroom risotto, pork shoulder, charcuterie and aged cheeses. Asian: Peking duck, char siu, miso-glazed aubergine, teriyaki beef, Korean BBQ short ribs, shiitake stir-fry.

Production Method
Biodynamic viticulture; grapes destemmed, short cold soak, ambient-yeast fermentation, gentle extraction; aged 12–18 months in predominantly new French oak; minimal fining/filtration.
