Tasting Note
Fresh red-berry and cherry fruit with floral and earthy notes. Medium-bodied, vibrant acidity, silky yet precise tannins, subtle oak and minerality; youthfully reserved with a long, energetic finish.

Food Pairing
Western: roast beef, lamb, duck confit, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, Korean BBQ, miso-glazed salmon, mushroom hot-pot/Chinese hotpot.

Production Method
Biodynamic viticulture; grapes mostly destemmed, indigenous yeast fermentation with gentle extraction; aged 13–15 months in predominantly new oak; minimal racking, bottled unfined/unfiltered.
