Tasting Note
Pure red‑cherry and crushed strawberry fruit with light cassis, floral spice and stony minerality. Medium-bodied, supple tannins, fine acidity and a saline, slightly bitter finish; savory, slightly reductive undertones.

Western: roast duck, duck confit, mushroom risotto, roast pork, charcuterie, beef tartare. Asian: Peking duck, char siu, miso‑glazed salmon, pork bulgogi (Korean BBQ), mushroom and soy stir‑fries, shabu‑shabu with ponzu.

Biodynamic viticulture; hand‑harvested into small crates, sorted, partly destemmed with some whole‑cluster fermentation, spontaneous yeast fermentation, aged 10–18 months in oak (some new), minimal intervention, gravity bottled, no fining/filtration.
