Tasting Note
Silky red-cherry and raspberry fruit with floral perfume, subtle mineral lift, lively acidity, light fine tannins and a long, fragrant finish.

Food Pairing
Western: roast duck, mushroom risotto, coq au vin, beef bourguignon. Asian: Peking duck, char siu pork, miso-glazed salmon, shiitake and soy braised dishes.

Production Method
Hand-harvested Pinot Noir; mostly destemmed with selective whole-bunch; matured in 350L oak barrels with moderate new oak for c.12–18 months.
