Tasting Note
Fresh red cherry and raspberry, rose petal and sweet spice, with plummy mid-palate, cedar and a saline mineral underpinning. Refined, polished tannins, bright acidity and a long, precise finish.
Food Pairing
Western: roasted lamb, beef stew, duck confit, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, miso ramen or soy-glazed mushrooms, Korean BBQ (bulgogi), teriyaki duck.
Production Method
Hand-harvested, destemmed, cool pre-fermentation maceration, gentle extraction; aged 15–18 months in French oak (c.20–30% new); bottled without fining or heavy filtration.
