Tasting Note
Concentrated blackberries and cassis with notes of dark chocolate, espresso, cedar and baking spice; full-bodied, plush and opulent with firm, dusty tannins and a long oak-driven finish.

Food Pairing
Western: grilled ribeye, roasted leg of lamb, braised short ribs, aged cheddar. Asian: Korean BBQ (bulgogi), Chinese red-braised beef, Peking duck, spicy Sichuan-style beef.

Production Method
Hand-harvested, small-lot open-top fermentations with extended maceration; aged 18–21 months in predominantly new French oak barrels.
