Tasting Note
Full-bodied Napa Cabernet with blackcurrant, blackberry, dark chocolate, licorice and spice; firm ripe tannins, plush oak and a long dusty finish.

Food Pairing
Grilled ribeye, roast lamb, veal osso buco, aged cheddar, mushroom risotto; Asian: Korean BBQ (bulgogi), char siu, Peking duck, spicy Sichuan beef.

Production Method
Hand-harvested, small open-top tank fermentation, extended maceration; aged ~19 months in French oak (majority new).
