Tasting Note
Concentrated blackcurrant, plum, cedar and graphite with violet and spice. Firm, grainy tannins, lively acidity and a long, iron-tinged finish; will soften with cellaring.

Western: roast lamb, ribeye, braised short ribs, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi), spicy Szechuan beef, char siu pork.

Hand-harvested; fermented traditionally and aged ~15 months in French oak (≈65% new).
