Tasting Note
Concentrated blackcurrant, blackberry and morello cherry with graphite, cedar, menthol and tobacco. Powerful, dense palate with firm, grainy tannins, bright acidity and a long mineral-tinged finish.

Food Pairing
Western: grilled ribeye, roast lamb, beef stew, aged hard cheeses. Asian: Korean BBQ (galbi), char siu, Peking duck, miso-marinated beef, Sichuan pepper beef.

Production Method
Hand-harvested; ~20 days maceration; matured ~18 months in French oak (≈75% new). Traditional vinification with temperature-controlled vats; consulting oenologist used.
