Tasting Note
Concentrated dark-cherry and cassis fruit with rose petals, forest-floor and exotic spice. Full-bodied, silky texture with firm, fine-grained tannins and a long, perfumed finish (ageworthy).

Food Pairing
Western: roast duck, beef bourguignon, roasted lamb, venison, mushroom/truffle risotto, aged Comté. Asian: Peking duck, char siu or soy-braised short ribs, miso-glazed aubergine, grilled shiitake dishes.

Production Method
Hand-harvested Pinot Noir; relatively extractive vinification (pigeage/extended maceration), élevage in French oak (high % new oak, Tronçais favored) for prolonged maturation.
