Tasting Note
Concentrated Pinot Noir: black cherry, plum, violets, black pepper and cocoa with forest-floor earth and a saline mineral thread. Fine-grained, firm tannins and a long, focused finish.

Food Pairing
Western: roast duck, beef bourguignon, mushroom risotto, charcuterie. Asian: Peking duck, char siu, Korean BBQ short ribs, miso-glazed pork belly or eggplant.

Production Method
Les Boudots Pinot Noir; partial whole-cluster (≈15%), temperature-controlled fermentation and élevage in French oak barrels (including some new oak) for ~12–18 months.
