Tasting Note
Bright red and blue fruit (cherry, raspberry, blueberry) with pressed violet, exotic spice and a distant oyster-shell/mineral note. Medium-bodied, finely chiselled chalky tannins, fresh acidity and a long saline, mineral finish.

Western: roast duck, herb-crusted lamb, mushroom risotto, beef bourguignon. Asian: Peking duck, soy-miso glazed salmon or pork, char siu, mushroom-based Chinese or Japanese dishes (miso, shiitake).

Production Method
Hand-harvested Pinot Noir; ~3-week fermentation with gentle extraction and temperature control, limited punch-downs; élevage in François Frères oak (variable % new oak), gravity bottled with minimal/no filtration.
