Tasting Note
Red and black cherry, black plum, violet and forest-floor aromas with spice, menthol and licorice. Silky entry, medium-plus body, fine ripe tannins and a long, mineral-tinged finish.

Food Pairing
Western: roast duck, lamb, mushroom risotto, beef tenderloin, charcuterie and soft cheeses. Asian: Peking duck, hoisin-glazed pork, soy-braised short ribs, miso aubergine, grilled shiitake with soba.

Production Method
Hand-harvested, destemmed, native-yeast fermentation with gentle extraction; aged ~16 months in French oak (≈50–60% new); light/no filtration.
