Tasting Note
Red and black cherry, plum, rose petal, fine red-berry spice, saline/mineral oyster-shell note, subtle cocoa and woodsmoke, filigreed tannins and a persistent peppery, mineral finish.

Roast duck, coq au vin, beef bourguignon, mushroom risotto, Époisses or Brie; Asian: Peking duck, soy/hoisin-glazed pork (char siu), shiitake mushroom stir-fry, grilled salmon with miso glaze.
Production Method
Hand-destemmed fruit; ambient-yeast fermentations with 2–3 week cuvaison; aged ~18 months in oak (≈15% new); organic/biodynamic viticulture; rarely fined or filtered.
