Tasting Note
Perfumed red and blue berries, violet and potpourri with spice, chalky minerality and firm, powdery tannins. Medium–full-bodied, elegant yet structured, showing an austere, long finish with saline notes.
Food Pairing
Western: roast duck, coq au vin, mushroom risotto, beef bourguignon. Asian: Peking duck, char siu (Cantonese BBQ pork), soy/miso glazed salmon, shiitake and tofu stir-fry.
Production Method
Hand-harvested grapes, fully destemmed, fermented on indigenous yeasts with gentle punch‑downs; aged in French oak with minimal new barrels (low %), traditionally bottled (2019 Pitures released in magnum).
