Tasting Note
Mineral-driven Pinot Noir: red and black cherry, raspberry, rose petal, sweet spice and raw cocoa, with chalky minerality, powdery tannins and a long, focused finish. Medium-full, tightly wound and built for cellaring.

Western: roast duck, duck confit, mushroom risotto, roast pork loin, coq au vin. Asian: Peking duck, char siu (Cantonese BBQ pork), miso-glazed salmon or cod, teriyaki salmon, bulgogi (Korean BBQ), shiitake/soy noodle dishes.
Production Method
Hand-harvested, typically 100% de-stemmed; indigenous yeast fermentation, gentle punchdowns; aged 15–18 months in French oak (some new oak), unfiltered. Bottled predominantly in magnum (Pitures often magnum-only since 2015).
