Tasting Note
Dark cherry, raspberry and blackberry with violet, truffle and sweet spice; silky texture, fine-grained tannins and a long mineral-tinged finish.

Food Pairing
Western: roasted duck, venison, beef fillet, mushroom risotto, aged Comté or Époisses. Asian: Peking duck, miso-glazed fish, Korean bulgogi, teriyaki beef, shiitake/soy mushroom hot pot.

Production Method
Hand-harvested, full destemming, native-yeast fermentation with extended maceration; aged 15–18 months in French oak (significant proportion new for Grand Cru).
