Tasting Note
Ruby; red cherry, citrus zest, floral notes and spices. Delicate, saline tannins, lively acidity and prolonged aromatic persistence.

Food Pairing
Western: roast duck, game, poultry, beef bourguignon, mushroom risotto. Asian: Peking duck, char siu, miso-glazed salmon, shiitake stir-fry, Korean BBQ (bulgogi).

Production Method
Hand-harvested, 100% destemmed; 3–5 day cold pre-fermentation, 18–20 day fermentation in temperature-controlled stainless vats; aged 16 months in 50% new French oak; bottled by the domaine.
