Tasting Note
Bright red and black cherry, raspberry and violet with hints of forest floor, black tea and gentle spice. Silky texture, refined oak, supple tannins and a long, mineral-tinged finish.

Western: roast duck, hanger steak, veal with chanterelles, beef tenderloin, mushroom risotto, soft-ripened cheeses. Asian: Peking duck, char siu (Cantonese BBQ pork), Korean bulgogi, miso-glazed eggplant, teriyaki or soy-roasted salmon.

Production Method
Hand-harvested, fully destemmed; cold pre-fermentation period then fermentation in temperature-controlled stainless steel/open vats with natural yeasts; aged 12–18 months in French oak (moderate new oak).
