Tasting Note

Elegant Pinot Noir: red and black cherry, plum, violet and subtle cocoa/earth notes. Silky texture, velvety tannins, balanced acidity and a long, mineral finish with spice and orange-zest accents.

Food Pairing

Western: roast duck, roast chicken, lamb, beef Wellington, mushroom risotto, aged Comté or Brie. Asian: Peking duck, char siu, soy-glazed salmon, Korean BBQ (bulgogi), mushroom stir-fry or shiitake-based dishes.

Production Method

Hand-harvested and sorted; predominantly destemmed; native-yeast fermentation in temperature-controlled tanks or cement; élevage 15–18 months in French oak barrels (c.40% new). Light filtration, bottled at the domaine.

Domaine Michel Noëllat, a multi-generational Vosne-Romanée estate run by Sophie & Sébastien Noëllat. ~20–23 ha across many parcels in the Côte de Nuits; modern cellar with temperature control and traditional Burgundian practices.
