Tasting Note
Concentrated citrus and tropical fruits (Meyer lemon, white peach, green mango) with honeysuckle, crushed stone and saline minerality; silky medium–full body, vibrant acidity and a long, spicy, beeswax-tinged finish.

Western: oysters, grilled lobster, buttered scallops, roasted/poached chicken, creamy poultry dishes, aged goat or triple-cream cheeses. Asian: sashimi/sushi, tempura, miso-glazed cod, steamed white fish, dim sum (har gow), lightly spiced Vietnamese or Chinese seafood dishes.
Production Method
Hand-harvested; fermented and aged 13–16 months in oak barriques with a high proportion of new oak (approx. 50–62%); blended from Sauvignon Blanc and Sémillon and bottled after élevage.
