Tasting Note
Dense black-fruit core of blueberry, blackberry and plum with smoked-meat, black pepper, violet and dark chocolate notes; full-bodied, plush fruit, fine dusty tannins and a long savory finish.

Food Pairing
Western: grilled/roasted lamb, ribeye, braised short ribs, barbecued beef, aged hard cheeses. Asian: Korean BBQ (bulgogi/galbi), Sichuan-style beef, char siu, lamb curry, yakitori-style grilled meats.

Production Method
Hand-harvested, hand-sorted Syrah from steep, dry-farmed slopes; small yields, fermented and matured ~18 months in oak (substantial new oak influence).

Produced by Viña Montes (founded by Aurelio Montes); Folly is the estate's single-vineyard, ultra-premium Syrah from the highest slopes of Finca de Apalta, planted on steep granitic soils.
