Tasting Note
Dense black fruits (blackberry, blueberry, blackcurrant) with violets, white pepper, smoked meat and dark chocolate. Powerful, savory core with chalky texture, chewy tannins and a long, spicy finish.

Grilled or roasted beef, lamb, game (venison, wild boar), charcuterie, mature smoked cheeses; Asian: Korean BBQ (bulgogi/galbi), Chinese char siu, spicy Szechuan beef, teriyaki-glazed meats.

Production Method
Hand-harvested and rigorously sorted; fermented and matured ~16 months in French oak (approximately 80% new). Low yields from steep, granitic-scree soils.
