Tasting Note
Dense black and blue fruit (blackberry, plum, blueberry) with pink pepper, sweet spice, coffee and tobacco; silky, full-bodied palate, fine-grained tannins and very long, creamy finish.

Food Pairing
Western: grilled ribeye, lamb chops, pork ribs, roasted game, aged cheeses, mushroom risotto. Asian: Korean BBQ (bulgogi/galbi), char siu, Sichuan-style beef, teriyaki beef, Malaysian rendang.

Production Method
Hand-harvested fruit fermented and aged ~18 months in French oak (about 70% new; remainder second/third-use barrels).
