Violets, cedar, cassis and sour cherry with dark chocolate and tobacco; silky, finely textured palate, firm fresh acidity and fine-grained tannins, long dusty-oak finish.

Western: roast lamb, grilled ribeye/steak, venison, aged hard cheeses (cheddar, manchego). Asian: Korean BBQ (bulgogi/galbi), Chinese red‑cooked pork (hong shao rou), Sichuan beef, teriyaki beef or yakitori.

Estate-grown fruit; fermentations up to ~10 days, then 22 months in oak (25% large format, ~30% new barriques).
