Tasting Note

Bright black and red berry fruits—black plum, blackberry, pomegranate—with baking spices, mocha and menthol; medium-bodied, fine grainy tannins, lively acidity and a long, mineral-tinged finish.

Food Pairing

Western: roast lamb, grilled beef, venison, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ, spicy Sichuan or hoisin-glazed dishes.

Production Method

Estate Shiraz hand-harvested, destemmed to small open fermenters with short cold soak; pressed to large-format French oak (c.30% new) for ~18 months, then blended and bottled.
