Tasting Note
Cassis, black cherry, graphite, cedar and tobacco on the nose; dense, full-bodied palate with dark plum, leather, smoky oak and firm ripe tannins. Mineral undertow and a long, savory, cigar-box finish.

Western: roast beef, ribeye, grilled lamb, venison, mature hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), beef rendang, braised short ribs (galbi), spicy Sichuan beef.

Production Method
Hand-harvested, traditional fermentation with temperature control and malolactic fermentation; matured ~18–22 months in new French oak barrels before bottling.
