Tasting Note
Opulent blackcurrant, cassis and violet notes with graphite, pencil shavings, cedar, tobacco and dark chocolate. Full-bodied, rich and concentrated with ripe fruit veiling firm, ageworthy tannins and a long, mineral finish.

Food Pairing
Western: roast rack of lamb, côte de boeuf, braised short ribs, aged hard cheeses. Asian: Peking duck, Korean BBQ beef (bulgogi/galbi), char siu, spicy Sichuan beef, Japanese wagyu yakiniku.

Production Method
Hand-harvested fruit, destemmed and fermented in temperature-controlled vats; matured ~18–20 months in predominantly new French oak barrels, then blended and bottled at the estate.
