Tasting Note
Deep, concentrated blackcurrant and blackberry with notes of graphite, violet, cedar, espresso and tobacco. Ultra-refined, layered tannins, mineral spine and a long, saline finish with chocolate and spice nuances.

Food Pairing
Western: roast beef, rack of lamb, venison, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi), char siu, miso-glazed beef, Cantonese roasted meats.

Production Method
Hand-harvested, parcel selection; traditional fermentation with extended maceration; matured ~18–20 months in new French oak barrels (majority new).
