Tasting Note
Deep black-fruit core of cassis and black cherry with graphite, cedar, tobacco and warm spice. Full-bodied and concentrated with firm, ripe tannins, balanced acidity and a long, perfumed finish showing leather and dark chocolate.
Food Pairing
Western: roast lamb, ribeye, beef Wellington, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi/galbi), soy-braised beef, Cantonese roasted meats.
Production Method
Traditional Bordeaux vinification: hand-harvest, temperature-controlled fermentation and extended maceration; matured in French oak barrels with a high proportion of new oak.
