Tasting Note
Bright lemon color; aromas of grapefruit, green apple, ripe pineapple and subtle vanilla/yeasty notes. Vibrant acidity with a medium-rich texture, mineral core and a long, refined citrus and stone-fruit finish.

Western: roast chicken, seafood risotto, grilled salmon, creamy pasta. Asian: steamed bass, Cantonese/ Peking-style poultry, shellfish (steamed/roasted), Japanese sashimi and sushi, salt-baked chicken, seafood noodles.
Production Method
Hand-harvested Chardonnay; gentle press, barrel fermentation with native (wild) yeast, full malolactic fermentation and 11 months ageing in French oak (including new barrels).
