Tasting Note

Dark, brooding Pinot: black cherry, blueberry, wild herbs and rose petal with dusky spice and smoky-earth undertones. Silky, textural mid-palate, linear acidity and refined, layered tannins leading to a long, mineral-tinged finish.


Food Pairing

Roasted duck, braised lamb, mushroom risotto, cassoulet; Asian pairings: miso‑glazed salmon, Peking duck, Korean BBQ (bulgogi), shiitake and soy braised dishes.


Production Method

Fruit sourced from biodynamically farmed Momtazi Vineyard; fermented with gentle extraction (native yeasts, partial whole clusters), aged ~14–16 months in French oak (moderate new oak), typically bottled unfined and unfiltered.

Nicolas•Jay is a collaboration of Jean‑Nicolas Méo and Jay Boberg. Momtazi is a Demeter‑certified biodynamic vineyard in McMinnville (planted 1999/2004) prized for savory, umami textured Pinot fruit.
