Tasting Note
Elegant Pinot Noir: red cherry and raspberry, rose-petal perfume, subtle earth and iron minerality, gentle spice, silky tannins, bright acidity and a long, refined finish.
Food Pairing
Western: roast duck, coq au vin, mushroom risotto, roast pork, grilled salmon. Asian: Peking duck, char siu pork, teriyaki or miso-glazed salmon, shiitake mushroom stir-fries, miso aubergine.
Production Method
Hand-harvested, small-lot vinification with partial whole-bunch inclusion, fermented traditionally and aged in predominantly new oak barrels for élevage.
