Tasting Note
Layered blackcurrant, blackberry and black cherry with violet and dried rose petal; notes of graphite, espresso, cedar and dark chocolate. Silky, full-bodied with fine-grained tannins and a long, mineral-tinged finish.

Food Pairing
Western: grilled ribeye, roast lamb, beef Wellington, aged cheddar. Asian: Korean BBQ (galbi), Chinese-style roast duck or char siu, miso-glazed short ribs, wagyu yakiniku.

Production Method
Mostly ambient-yeast fermentation with ~22 days maceration; aged ~19 months in new French oak barrels; estate lots blended and lightly filtered prior to bottling.
