Tasting Note
Deep ruby. Aromas of black cherry, currant, cedar, graphite, vanilla and tobacco. Full-bodied palate of black fruit, cocoa, menthol and savory minerality; dense yet elegant tannins and a long, savory finish.

Food Pairing
Western: grilled Florentine steak, roast lamb, braised short ribs, duck breast, mushroom risotto. Asian: Peking duck, Cantonese roasted duck/pork (char siu), Korean BBQ beef, rich teriyaki or hoisin-glazed dishes, savoury Sichuan beef.

Production Method
Hand-harvested, double-sorted (manual + optical), fermented in stainless steel and concrete, ~15-day maceration; malolactic in oak; aged ~18 months in barriques (70% new), then ~12 months in bottle.
