Tasting Note
Intense, fresh and vertical: blackcurrant, blackberry, violet, wild herbs, espresso and toasted oak; ripe round tannins and lively acidity with a long mineral finish.

Food Pairing
Western: grilled ribeye/steak, roast lamb, braised short ribs, aged cheeses (Parmigiano, pecorino), mushroom risotto. Asian: Peking duck, Korean BBQ (bulgogi/galbi), char siu, rich Sichuan beef or braised pork belly, umami shiitake dishes.

Production Method
Fermented parcel-by-parcel in stainless steel and concrete; malolactic in barriques; aged ~18 months in French barriques (70% new), plus further barrel and bottle ageing.
