Tasting Note
Pale straw color with lifted white-flower and citrus blossom aromas; stone fruit (nectarine, peach), baked apple, warm biscotti and toasted oak. Bright acidity, saline minerality and a long, focused finish.

Food Pairing
Western: roasted chicken with herb butter, lobster or scallops in beurre blanc, creamy mushroom risotto, pork belly. Asian: miso‑glazed black cod, tempura prawns, fatty-sushi (toro), Cantonese roast pork, mild Thai coconut curry.

Production Method
Whole‑cluster pressed cold, barrel-fermented (French oak, ~58% new) with indigenous yeasts; spontaneous malolactic fermentation, aged ~15 months on lees with bâtonnage; bottled unfined/unfiltered.
