Tasting Note
Perfumed jasmine and honeysuckle with baked apple, quince and lemon peel; toasty vanilla, panna cotta and saline minerality. Medium–full bodied, satiny texture, bright acidity and a long, layered, shimmery finish.

Western: roast chicken, buttered lobster, mushroom risotto, grilled salmon, creamy pasta. Asian: miso‑glazed black cod, tempura prawns, sushi (fatty salmon/tuna), Cantonese roast pork, scallops with ginger‑soy.

Hand‑harvested estate fruit; whole‑cluster pressing, barrel‑fermented in French oak (≈45% new), partial malolactic; aged 15–18 months on the lees.
