Tasting Note
Dense, full-bodied Cabernet with blackcurrant, blackberry, cassis, graphite, bay leaf and cedar; dark chocolate, tobacco and savory spice. Plush, ripe fruit framed by firm, fine-grained tannins and a long, savory finish.

Food Pairing
Western: grilled ribeye, roast rack of lamb, braised short ribs, aged cheddar, dark chocolate. Asian: Korean BBQ (galbi), Cantonese roast duck/char siu, Sichuan beef, Indonesian beef rendang.

Production Method
Hand-harvested Beckstoffer Las Piedras fruit; small-lot fermentations, ~20 months in new French oak; minimal intervention, lightly fined/filtered or unfined/unfiltered depending on lot.
