Tasting Note
Dense blackcurrant and blackberry with mocha, graphite, lavender and bay leaf; savory herbs and baking spice. Velvety, concentrated, powerful tannins and a long mineral-tinged finish.

Food Pairing
Western: grilled ribeye, roast rack of lamb, venison stew, aged cheddar. Asian: Korean BBQ (galbi/bulgogi), char siu, spicy Sichuan beef, teriyaki-style beef.

Production Method
100% Cabernet Sauvignon from Beckstoffer Las Piedras; small-lot fermentation with extended maceration and ~18 months in French oak barrels.
