Tasting Note
Fresh blackberry and cassis with kirsch and wild blueberry, layered with lavender, graphite, tobacco and dark chocolate. Mineral, damp-earth core; medium–full body, grainy yet polished tannins and a long, floral-tinged finish.

Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar; Asian: Korean BBQ (bulgogi), Cantonese char siu, Szechuan beef, soy-glazed/teriyaki beef, Peking duck.
Production Method
Hand-harvested, cold-sorted and fermented in small lots with extended maceration; spontaneous malolactic fermentation in barrel. Aged ~18–20 months in French oak (majority new); bottled unfined and unfiltered.
