Tasting Note
Concentrated blackcurrant and blackberry with graphite, violet, cedar, dark chocolate and savory loam. Full-bodied, plush mid-palate, very fine-grained yet muscular tannins, bright lift and a long spice-tinged finish.

Dry-aged ribeye, braised short ribs, roast lamb, aged cheddar; Korean BBQ (bulgogi), Peking duck, char siu, miso-glazed eggplant.

Production Method
Hand-harvested single-vineyard Cabernet; small-lot fermentations with extended maceration; aged ~20 months in French oak (predominantly new), bottled after careful blending.
